Premium Australian grown fresh Rainbow Trout. The fish are grown in the waters of the Goulburn River and Stony Creek. Once harvested they are gutted, packed and dispatched to Butts in Albury. On receipt the fish are filleted and boned before being hand rubbed with our own Gravlax spice mix and coated in fresh dill. The fish are then individually wrapped, held at approx 2 degrees and turned daily for four days before being cleaned of excess rub and packed with fresh dill. The resulting Gravlax is characteristically waxy and has a delicately sweet flavour. Perfect with any lighter style white wine.
