Premium Australian grown fresh Rainbow Trout. The fish are grown in the waters of the Goulburn River. Once harvested they are gutted, packed and dispatched to Butts in Albury. On receipt the fish receive a second cleaning before being cured using Butt’s original fish cure recipe and then hot smoked over Australian Hard Wood in our traditional open flame smoke house. Unique to Butts – the trout is smoked belly down which assists trap in moisture and flavour. The resulting fish displays characteristic trout flavour infused with a creamy sweetness unique to Butts Smoked Rainbow Trout. The fish is presented upright making it an attractive, easy to serve and very tasty offering for sharing in small or large groups.
